- 2 salmon fillets about 120g each
- 1 lemon sliced
- 2 tablespoons olive oil
- Fresh herbs thyme, rosemary, oregano
- Salt and pepper to taste
- Optional: A few cherry tomatoes or olives for garnish

- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- Prepare the salmon: Rinse the fillets under cold water and pat them dry with paper towels. If the skin is on, you can leave it, but make sure the fillets are bone-free.
- Season: Place the salmon fillets on the tray. Drizzle with olive oil and season with salt, pepper, and your choice of fresh herbs like thyme and rosemary.
- Add lemon slices: Place a few slices of lemon on top of the fish to infuse it with citrus flavor. If you like, you can also add some halved cherry tomatoes or olives around the fish.
- Bake: Place the tray in the oven and bake for 15–20 minutes, or until the salmon is cooked through and flakes easily with a fork. You can baste the salmon with the juices halfway through to keep it moist.
- Serve: Once done, remove from the oven and garnish with fresh parsley or extra lemon juice. Serve hot with your favorite side dishes like roasted vegetables or a simple salad.
- Variations & Tips
- For a Mediterranean twist, add olives, capers, and a drizzle of balsamic vinegar just before serving.
- Substitute for dietary needs: If you are avoiding dairy, you can use avocado oil or another non-dairy fat in place of olive oil.
- Make it spicy: Add a pinch of chili flakes for some heat.
- Grill instead of bake: If you prefer grilling, cook the fillets on medium heat for 4–5 minutes on each side until they reach the desired doneness.
