- Preheat the Oven: Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
- Mix the Dry Ingredients: In a mixing bowl, combine the almond flour, granulated sugar, and salt. Mix well until evenly combined.
- Prepare the Egg Whites: In a separate bowl, whisk the egg whites using an electric mixer or a whisk until they form stiff peaks. This should take about 3-5 minutes.
- Combine Ingredients: Gently fold the egg whites into the dry mixture. Add the almond and vanilla extracts. Be careful not to deflate the egg whites; you want to keep the mixture airy.
- Shape the Cookies: Using a spoon or your hands, form small balls (about 1 inch in diameter) and place them on the prepared baking sheet, leaving space between each one as they will spread.
- Dust with Powdered Sugar: If desired, dust the tops of the cookies with powdered sugar before baking.
- Bake: Bake in the preheated oven for about 25 minutes, or until the tops are lightly golden and cracked.
- Cool: Remove from the oven and let them cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
