- 200 g all-purpose flour
- Salt to taste
- For the filling:
- 1 carrot
- 100 g cabbage or any vegetable of your choice
- Olive oil for frying
- Paprika to taste
- Salt and pepper to taste
- Butter for brushing
- Optional:
- Add cheese cubes for a richer filling or other vegetables like spinach or zucchini for variety.

- Instructions:
- Prepare the Dough: In a bowl, combine flour and water with a pinch of salt. Knead until you have a smooth, firm dough. Divide it into four equal portions, cover them with a towel, and let them rest for about 15 minutes.
- Prepare the Filling: Grate the carrot and cabbage. Place them in a bowl and season with paprika, salt, and pepper. If you'd like, you can also add cheese or other spices.
- Assemble the Fagottini: Roll each dough portion into a ball, then flatten it into a disc. Brush with melted butter and place a generous amount of the veggie filling in the center. Fold the dough over the filling and seal the edges by pressing with a fork.
- Cook: Heat olive oil in a pan over medium heat. Fry the fagottini on both sides for about 5-7 minutes or until golden brown. Remove excess oil with paper towels.
- Variations & Tips:
- For a faster option, you can use pre-made puff pastry instead of homemade dough.
- You can experiment with different vegetables, like spinach, leeks, or even mushrooms. For a non-vegan version, try adding a bit of cheese.
- Dietary Needs: For a gluten-free version, swap regular flour with a gluten-free flour blend. You can also use vegan butter or olive oil for a dairy-free option.
