- Sausage: 300g 10 oz Italian sausage, casings removed (mild or spicy, based on preference)
- Cream: 200ml 3/4 cup heavy cream
- Onion: 1 medium onion finely chopped
- Garlic: 2 cloves garlic minced
- Olive Oil: 2 tablespoons
- Parmesan Cheese: 50g 1/2 cup grated, plus extra for serving
- Salt and Pepper: to taste
- Fresh Parsley: for garnish optional

- Method
- Boil the Pasta:
- In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta in a colander.
- Cook the Sausage:
- In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- Add the Sausage:
- Add the sausage to the skillet. Use a wooden spoon to break it apart into small pieces. Cook until browned and cooked through, about 5-7 minutes. Make sure to stir occasionally to ensure even cooking.
- Make the Sauce:
- Lower the heat to medium-low, and add the heavy cream to the skillet. Stir to combine, letting it simmer for 2-3 minutes until slightly thickened. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.
- Combine Pasta and Sauce:
- Add the drained pasta to the skillet and toss to coat with the sauce. If needed, add more pasta water to help combine everything smoothly. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
- Serve:
- Plate the pasta and garnish with additional Parmesan cheese and chopped fresh parsley if desired. Enjoy your creamy pasta right away!
- Variations
- Vegetarian Version: Substitute the sausage with sautéed mushrooms or a meat substitute.
- Spicy Kick: Add red pepper flakes while cooking the sausage for some heat.
- Vegetable Addition: Mix in spinach, peas, or bell peppers to incorporate more vegetables.
