Sgombro Marinato
Equipment
- Equipment Needed
- Sharp knife
- Cutting board
- Mixing bowl
- Plastic wrap or airtight container
- Serving platter
Ingredients
- Ingredients
- For the marinated mackerel:
- 4 fresh mackerel fillets skin on
- 1 cup white wine vinegar
- 1/2 cup water
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic sliced
- 1/2 cup fresh parsley chopped
- Zest of 1 lemon
- 1/4 cup extra virgin olive oil
Instructions
- Step-by-Step Instructions
- Prepare the Mackerel:
- Start by rinsing the mackerel fillets under cold water and patting them dry with paper towels. Ensure that any bones have been removed, as they can be unpleasant to bite into.
- Make the Marinade:
- In a mixing bowl, combine the white wine vinegar, water, sugar, salt, and black pepper. Stir until the sugar and salt are dissolved.
- Add Aromatics:
- Add the sliced garlic, chopped parsley, and lemon zest to the marinade. This will infuse the mackerel with fresh and zesty flavors.
- Marinate the Fish:
- Place the mackerel fillets in a plastic wrap or an airtight container. Pour the marinade over the fillets, ensuring they are fully submerged. Cover with plastic wrap or seal the container.
- Let it marinate in the refrigerator for at least 1 hour. For a deeper flavor, you can leave it overnight.
- Serve:
- After marinating, remove the fillets from the marinade and let them drain briefly on a paper towel. Drizzle with extra virgin olive oil before serving.
- Slice the fillets into smaller portions and arrange them on a serving platter. You can also garnish with additional fresh parsley or lemon slices for a pop of color.
- Variations
- Add Spices: For a kick, add red pepper flakes to the marinade.
- Herb Infusion: Substitute parsley with dill or cilantro for a different flavor profile.
- Vegan Option: Replace mackerel with firm tofu for a plant-based version. Marinate tofu slices for at least 2 hours.
