- 1 cup 200 g cherry tomatoes, halved
- 1 cup 150 g fresh mushrooms, thinly sliced
- ¼ cup 25 g grated Grana Padano or Parmesan
- 2 tbsp olive oil for drizzling
- 1 tsp dried oregano
- Fresh basil leaves optional, for garnish

- Step 1: Make the Dough
- In a small bowl, mix warm water, sugar, and dry yeast. Let it sit for 5-7 minutes until foamy.
- In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a rough dough forms.
- Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise for 1 hour or until it doubles in size.
- Step 2: Prepare the Toppings
- While the dough rises, slice cherry tomatoes and mushrooms. Crumble the French cheese and grate the Grana Padano.
- Preheat the oven to 475°F (245°C). Place a pizza stone in the oven if using.
- Step 3: Assemble the Pizza
- Punch down the risen dough and roll it out into a 12-inch circle or rectangle on a floured surface.
- Transfer the dough to a baking sheet or pizza stone.
- Brush the surface of the dough with olive oil. Sprinkle oregano evenly.
- Layer the toppings: start with mozzarella, then French cheese, cherry tomatoes, and mushrooms. Top with grated Grana Padano.
- Step 4: Bake
- Bake the pizza for 12-15 minutes or until the crust is golden brown and the cheese is bubbling.
- Remove from the oven and let the pizza cool for 5 minutes before slicing.
- Step 5: Garnish and Serve
- Garnish with fresh basil leaves if desired.
