- Prepare the Batter
- In a mixing bowl, add 1 cup of ricotta cheese.
- Whisk in 1 large egg until well combined.
- Add 1/4 cup of granulated sugar, 1 teaspoon of vanilla extract, and the zest of 1 lemon (if using). Mix until smooth.
- Sprinkle in 1 teaspoon of baking powder and 1/2 teaspoon of salt, mixing well.
- Gradually fold in 1 cup of all-purpose flour until just combined. Avoid overmixing; it’s okay if there are a few lumps.
- Let the Batter Rest
- Allow the batter to stand for about 10 minutes. This helps the flavors meld and makes for a fluffier fritter.
- Heat the Oil
- In a non-stick frying pan or deep fryer, pour in vegetable oil, enough to cover the bottom by about 1 inch.
- Heat the oil over medium heat until it reaches about 350°F (175°C). You can test the oil by dropping a small spoonful of batter into it; if it sizzles and floats to the surface, it’s ready.
- Fry the Fritters
- Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil. Don’t overcrowd the pan; cook in batches if necessary.
- Fry the fritters for about 3-4 minutes on each side, or until they are golden brown.
- Use a slotted spoon or spatula to remove the fritters and drain them on paper towels.
- Serve
- Dust the warm fritters with powdered sugar before serving. They’re best enjoyed fresh, but can also be served at room temperature.
