Prepare the Batter
In a mixing bowl, add 1 cup of ricotta cheese.
Whisk in 1 large egg until well combined.
Add 1/4 cup of granulated sugar, 1 teaspoon of vanilla extract, and the zest of 1 lemon (if using). Mix until smooth.
Sprinkle in 1 teaspoon of baking powder and 1/2 teaspoon of salt, mixing well.
Gradually fold in 1 cup of all-purpose flour until just combined. Avoid overmixing; it’s okay if there are a few lumps.
Let the Batter Rest
Allow the batter to stand for about 10 minutes. This helps the flavors meld and makes for a fluffier fritter.
Heat the Oil
In a non-stick frying pan or deep fryer, pour in vegetable oil, enough to cover the bottom by about 1 inch.
Heat the oil over medium heat until it reaches about 350°F (175°C). You can test the oil by dropping a small spoonful of batter into it; if it sizzles and floats to the surface, it’s ready.
Fry the Fritters
Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil. Don’t overcrowd the pan; cook in batches if necessary.
Fry the fritters for about 3-4 minutes on each side, or until they are golden brown.
Use a slotted spoon or spatula to remove the fritters and drain them on paper towels.
Serve
Dust the warm fritters with powdered sugar before serving. They’re best enjoyed fresh, but can also be served at room temperature.
