Method
Step 1: Prepare the Pork Roast
Preheat your oven to 375°F (190°C).
Rub the pork loin with olive oil, minced garlic, chopped rosemary, thyme, salt, and pepper. Make sure the spices are evenly distributed.
Place the pork roast in a roasting pan, fat side up.
Step 2: Roast the Pork
Roast the pork in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) when checked with a meat thermometer.
Baste the roast every 30 minutes with the pan juices for a moist and flavorful outcome.
Step 3: Prepare the Apple Sauce
While the pork is roasting, combine chopped apples, apple cider, lemon juice, brown sugar, cinnamon, and a pinch of salt in a saucepan over medium heat.

Use a whisk or a fork to mash the apples into a chunky sauce. Adjust sweetness if needed.
Step 4: Rest and Serve
Once the pork is cooked, remove it from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute.
Slice the pork roast into thick pieces and serve it warm, topped with the apple sauce.
