  • Soak the Cod:
  • If you haven't done so already, soak the baccalà in cold water for at least 24 hours before cooking, changing the water several times to remove excess salt.

  • About 10 minutes before you’re ready to cook, preheat your grill or grill pan over medium-high heat.
  • Dry the Cod:
  • Once soaked, drain the cod and pat it dry with paper towels. This will help achieve a nice grill mark and prevent sticking.

  • Brush the baccalà with olive oil and season lightly with salt and pepper.
