Step 1: Prepare the Baccalà
Soak the Cod:
If you haven't done so already, soak the baccalà in cold water for at least 24 hours before cooking, changing the water several times to remove excess salt.
Preheat the Grill:
About 10 minutes before you’re ready to cook, preheat your grill or grill pan over medium-high heat.
Dry the Cod:
Once soaked, drain the cod and pat it dry with paper towels. This will help achieve a nice grill mark and prevent sticking.
Season the Cod:
Brush the baccalà with olive oil and season lightly with salt and pepper.
Step 2: Grill the Baccalà
Grill the Cod:
Place the baccalà on the grill and cook for about 4-5 minutes on each side, depending on the thickness, until the fish is cooked through and has nice grill marks.
Step 3: Make the Lemon Sauce
Mix the Sauce:
While the fish is grilling, in a mixing bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, and capers. Season with salt and pepper to taste.
Step 4: Serve
Plate the Dish:
Once the baccalà is grilled to perfection, transfer it to a serving platter.
Drizzle with Sauce:
Generously drizzle the lemon sauce over the grilled cod.
Garnish and Enjoy:
Sprinkle with chopped parsley before serving for a touch of color and flavor.

Herb Infusion: Add fresh herbs like thyme or oregano to the lemon sauce for an aromatic twist.
Spicy Kick: Incorporate a pinch of red pepper flakes into the sauce for a bit of heat.
