  • 1 lb 450g salted cod (baccalà), soaked for at least 24 hours in cold water, changing the water several times
  • ½ cup 120ml olive oil
  • 1 onion thinly sliced
  • 1 carrot thinly sliced
  • 1 celery stalk thinly sliced
  • 2 garlic cloves minced
  • 1 cup 240ml white wine vinegar
  • ¼ cup 50g brown sugar
  • ½ cup 120ml water
  • Salt and pepper to taste
  • Fresh parsley chopped, for garnish

  • Step 1: Prepare the Cod
  • Soak the Cod: If you haven’t already, soak the salted cod in cold water for 24 to 48 hours, changing the water every 8 hours to reduce the saltiness.
  • Rinse and Cut: After soaking, rinse the cod under cold water. Pat dry with paper towels and cut into serving-sized pieces.
  • Step 2: Sauté the Vegetables
  • Heat the Oil: In a large skillet, heat the olive oil over medium heat.
  • Add Vegetables: Add the sliced onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.
  • Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.
  • Step 3: Cook the Cod
  • Add Cod to Skillet: Place the pieces of cod in the skillet, skin side down, and cook for about 5 minutes until lightly browned.
  • Flip the Cod: Carefully turn the cod pieces over and cook for another 5 minutes.
  • Step 4: Create the Sweet and Sour Sauce
  • Combine Ingredients: In a bowl, mix the white wine vinegar, brown sugar, and water until the sugar is dissolved.
  • Pour Over Cod: Pour the vinegar mixture over the cod in the skillet.
  • Simmer: Bring to a simmer, reduce the heat to low, and let it cook for about 10-15 minutes, or until the cod is cooked through and the sauce has thickened slightly. Season with salt and pepper to taste.
  • Step 5: Serve
  • Garnish: Once cooked, transfer the cod to a serving platter. Drizzle the sauce and vegetables over the top and garnish with chopped parsley.
  • Let It Stand: For the best flavor, let the dish stand for about an hour before serving to allow the flavors to meld.

  • Add Heat: For a spicy kick, add red pepper flakes to the vegetable mixture while sautéing.
