Method
Step 1: Prepare the Cod
Soak the Cod: If you haven’t already, soak the salted cod in cold water for 24 to 48 hours, changing the water every 8 hours to reduce the saltiness.
Rinse and Cut: After soaking, rinse the cod under cold water. Pat dry with paper towels and cut into serving-sized pieces.
Step 2: Sauté the Vegetables
Heat the Oil: In a large skillet, heat the olive oil over medium heat.
Add Vegetables: Add the sliced onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.
Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.
Step 3: Cook the Cod
Add Cod to Skillet: Place the pieces of cod in the skillet, skin side down, and cook for about 5 minutes until lightly browned.
Flip the Cod: Carefully turn the cod pieces over and cook for another 5 minutes.
Step 4: Create the Sweet and Sour Sauce
Combine Ingredients: In a bowl, mix the white wine vinegar, brown sugar, and water until the sugar is dissolved.
Pour Over Cod: Pour the vinegar mixture over the cod in the skillet.
Simmer: Bring to a simmer, reduce the heat to low, and let it cook for about 10-15 minutes, or until the cod is cooked through and the sauce has thickened slightly. Season with salt and pepper to taste.
Step 5: Serve
Garnish: Once cooked, transfer the cod to a serving platter. Drizzle the sauce and vegetables over the top and garnish with chopped parsley.
Let It Stand: For the best flavor, let the dish stand for about an hour before serving to allow the flavors to meld.
Variations
Vegetarian Option: Substitute the cod with firm tofu for a plant-based version.
Add Heat: For a spicy kick, add red pepper flakes to the vegetable mixture while sautéing.
