Instructions:
Step 1: Prepare the Pizza Dough
In a mixing bowl, combine 1 teaspoon sugar, warm water (about 110°F), and dry yeast. Let it sit for about 5–10 minutes until the yeast becomes foamy.
Once the yeast is activated, add 2 cups flour, 1 teaspoon salt, and 2 tablespoons olive oil. Mix until the dough starts to come together.
Knead the dough on a floured surface for about 5–7 minutes until smooth and elastic.
Form the dough into a ball and place it in a lightly oiled bowl. Cover with a damp cloth and let it rise for about 1 hour, or until it doubles in size.
Step 2: Make the Pizza Sauce
While the dough is rising, heat 1 tablespoon olive oil in a pan over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant.
Add the pomodoro (or crushed tomatoes) to the pan, along with oregano, salt, pepper, and sugar (if using). Simmer for 10–15 minutes, stirring occasionally until the sauce thickens.
Step 3: Prepare the Bacon
While the sauce simmers, cook the bacon slices in a pan until crispy (about 5–7 minutes). Once cooked, drain them on a paper towel and chop into bite-sized pieces.
Step 4: Preheat the Oven
Preheat your oven to 475°F (245°C) and if you have a pizza stone, place it in the oven while it’s heating.
Step 5: Shape the Pizza Dough
Once the dough has risen, punch it down and divide it into two equal portions (for two pizzas).
On a floured surface, roll out one portion of dough into a round shape (about 12 inches in diameter). Repeat for the second pizza.
Step 6: Assemble the Pizza
Place the rolled-out dough onto a pizza stone or a baking sheet lined with parchment paper.
Spread a thin layer of the pomodoro sauce on the dough.
Sprinkle an even amount of mozzarella, formaggio, and francese cheese over the sauce.
Top with crispy bacon pieces and any additional toppings you like (like fresh basil or a drizzle of olive oil).
Step 7: Bake the Pizza
Transfer the pizza to the preheated oven and bake for 10–12 minutes or until the crust is golden brown and the cheese is bubbly and slightly browned.
If you’re making two pizzas, bake them one at a time or in separate racks if your oven allows it.
Step 8: Serve
Once the pizza is done, remove it from the oven and let it rest for 5 minutes.
Slice it up and serve hot with a side of your favorite salad!
