Method:
Preheat the Oven: Set the oven to 400ºF (200ºC).
Layer the Potatoes: In a deep ovenproof dish, drizzle a little olive oil on the bottom. Layer the potato slices, followed by some of the garlic, cheeses, and tomatoes. Season with salt and pepper.
Add the Lamb Chops: Place two lamb chops on top of the potatoes. Continue layering with potatoes, garlic, tomatoes, and cheeses, repeating until all the ingredients are used.
Add Water and Oil: Finish with a final layer of potatoes, topping it with a generous amount of cheese. Drizzle olive oil over the top and pour in the water (or wine).
Bake Covered: Cover the dish with aluminum foil and bake for 1 hour and 15 minutes.
Final Browning: After 1 hour and 15 minutes, remove the foil and bake for an additional 30 minutes to allow the lamb and potatoes to brown and become crispy.
Variations:
For a smokier flavor, add a bit of smoked paprika or a few sprigs of rosemary.
For a lighter version, substitute the lamb with chicken or a plant-based protein, and opt for less oil.
