Ingredients
  

  • Ingredients:
  • 4 lamb double loin chops about 2.2lb / 1kg
  • 3 medium potatoes peeled and thinly sliced
  • 3 garlic cloves chopped
  • ½ cup finely grated Parmigiano Reggiano cheese
  • ½ cup finely grated Pecorino cheese
  • 3 roma tomatoes roughly chopped
  • cup extra virgin olive oil
  • Salt and pepper to taste
  • ¼ cup water or dry white wine

Instructions
 

  • Method:
  • Preheat the Oven: Set the oven to 400ºF (200ºC).
  • Layer the Potatoes: In a deep ovenproof dish, drizzle a little olive oil on the bottom. Layer the potato slices, followed by some of the garlic, cheeses, and tomatoes. Season with salt and pepper.
  • Add the Lamb Chops: Place two lamb chops on top of the potatoes. Continue layering with potatoes, garlic, tomatoes, and cheeses, repeating until all the ingredients are used.
  • Add Water and Oil: Finish with a final layer of potatoes, topping it with a generous amount of cheese. Drizzle olive oil over the top and pour in the water (or wine).
  • Bake Covered: Cover the dish with aluminum foil and bake for 1 hour and 15 minutes.
  • Final Browning: After 1 hour and 15 minutes, remove the foil and bake for an additional 30 minutes to allow the lamb and potatoes to brown and become crispy.
  • Variations:
  • For a smokier flavor, add a bit of smoked paprika or a few sprigs of rosemary.
  • For a lighter version, substitute the lamb with chicken or a plant-based protein, and opt for less oil.

  • Dietary Needs: If you're gluten-free, this dish is naturally gluten-free. You can also make it dairy-free by skipping the cheeses or using vegan cheese.
