  • Prepare the Dough:
  • In a mixing bowl, combine flour, salt, and black pepper. If using cheese, mix it in.
  • Add the egg, milk, and water, stirring to form a soft dough.
  • Knead the dough for about 10 minutes until it becomes smooth and elastic.
  • Cover with a damp cloth and let rest for 1 hour at room temperature.
  • Shape the Crescia:
  • Divide the dough into 6 equal portions.
  • Roll each portion into a thin round or oval, about 2mm thick.
  • Cook the Bread:
  • Heat a frying pan or griddle over medium heat and lightly oil it.
  • Cook each crescia for 2–3 minutes per side until golden spots appear and it puffs slightly.
  • Keep warm in a clean towel while cooking the rest.
  • Serve:
  • Serve warm or at room temperature with prosciutto, salami, cheeses, or as a base for spreads.
