  • Step 1: Prepare the Dough
  • In a large mixing bowl, combine the flour, sugar, and salt.
  • Add the softened butter and mix until crumbly.
  • Stir in the egg and vanilla extract until the dough begins to come together. If the dough is too dry, add a tablespoon of cold water at a time until it forms a ball.
  • Wrap the dough in plastic wrap and let it rest in the refrigerator for 15 minutes.
  • Step 2: Prepare the Filling
  • For Sweet Filling: In another bowl, combine ricotta, powdered sugar, lemon zest, and cinnamon (if using). Mix until smooth.
  • For Savory Filling: Combine chopped spinach, ricotta, salt, pepper, and nutmeg. Mix well.
  • Step 3: Roll Out the Dough
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • On a floured surface, roll out the dough to about ¼ inch thick.
  • Cut the dough into squares (approximately 4x4 inches).
  • Step 4: Assemble the Fagottini
  • Place a tablespoon of filling in the center of each square.
  • Fold the square over to create a triangle and press the edges to seal. You can crimp the edges with a fork for decoration.
  • Place the filled fagottini on the prepared baking sheet.
  • Step 5: Bake
  • Brush the tops with a beaten egg for a golden finish.
  • Bake in the preheated oven for 15-20 minutes, or until lightly golden.
  • Let them cool slightly before serving.

  • Sweet: Substitute the ricotta with mascarpone for a richer filling or add chocolate chips for extra sweetness.
  • Savory: Use different vegetables like mushrooms or peppers, or add herbs like basil or parsley.
