Method
Step 1: Prepare the Dough
In a large mixing bowl, combine the flour, sugar, and salt.
Add the softened butter and mix until crumbly.
Stir in the egg and vanilla extract until the dough begins to come together. If the dough is too dry, add a tablespoon of cold water at a time until it forms a ball.
Wrap the dough in plastic wrap and let it rest in the refrigerator for 15 minutes.
Step 2: Prepare the Filling
For Sweet Filling: In another bowl, combine ricotta, powdered sugar, lemon zest, and cinnamon (if using). Mix until smooth.
For Savory Filling: Combine chopped spinach, ricotta, salt, pepper, and nutmeg. Mix well.
Step 3: Roll Out the Dough
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
On a floured surface, roll out the dough to about ¼ inch thick.
Cut the dough into squares (approximately 4x4 inches).
Step 4: Assemble the Fagottini
Place a tablespoon of filling in the center of each square.
Fold the square over to create a triangle and press the edges to seal. You can crimp the edges with a fork for decoration.
Place the filled fagottini on the prepared baking sheet.
Step 5: Bake
Brush the tops with a beaten egg for a golden finish.
Bake in the preheated oven for 15-20 minutes, or until lightly golden.
Let them cool slightly before serving.
Variations
Sweet: Substitute the ricotta with mascarpone for a richer filling or add chocolate chips for extra sweetness.
Savory: Use different vegetables like mushrooms or peppers, or add herbs like basil or parsley.
