Method:
Step 1: Prepare the Dough
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy. This activates the yeast.
In a larger mixing bowl, combine flour and salt. Make a well in the center, then pour in the activated yeast mixture and olive oil.
Stir until the dough comes together, then knead it for about 5 minutes on a floured surface until smooth and elastic.
Form the dough into a ball and place it in an oiled bowl. Cover with a clean towel and let it rise for about 1 hour, or until it has doubled in size.
Step 2: Preheat the Oven
Preheat your oven to 220°C (430°F). If you have a pizza stone, preheat it in the oven as well for a crispier crust.
Step 3: Roll Out the Dough
Punch down the dough and divide it into 2 smaller portions (for smaller pizzas) or keep it whole for a large pizza.
Roll the dough out on a floured surface to your desired thickness, about ¼ inch thick.
Step 4: Assemble the Pizza
On a baking sheet or pizza stone, place the rolled-out dough. Drizzle a little olive oil on top to prevent it from getting soggy.
Mix the tomato passata and marinara sauce in a small bowl, then spread it evenly over the dough, leaving a small border around the edges.
Sprinkle shredded mozzarella cheese over the sauce.
Arrange the zucchini slices, tonno, gamberetti, and halved pomodorini on top of the pizza.
Season with salt and pepper to taste.
Step 5: Bake the Pizza
Place the pizza in the preheated oven. Bake for 10-12 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
If you’re using fresh basil, sprinkle it on top of the pizza right before serving.
Step 6: Let It Rest
Remove the pizza from the oven and let it rest for 5 minutes before slicing. This helps the toppings set and makes it easier to cut.
