  • Trim and Cut: Begin by washing the asparagus and trimming the woody ends. Cut the asparagus into 1-inch pieces.
  • Step 2: Sauté the Asparagus
  • Heat Oil: In an oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. If you’re using onion, add it now and sauté for about 2-3 minutes until translucent.
  • Cook Asparagus: Add the asparagus pieces to the skillet. Sauté for about 5-7 minutes until they are tender but still bright green. Season with a pinch of salt and pepper.
  • Step 3: Mix the Egg Mixture
  • Whisk Eggs: In a mixing bowl, whisk together the eggs, milk, grated Parmesan cheese, salt, and pepper until well combined.
  • Step 4: Combine and Cook
  • Combine Mixtures: Pour the egg mixture over the sautéed asparagus in the skillet. Gently stir to combine.
  • Cook on Stove: Let the frittata cook on the stove for about 3-4 minutes without stirring, until the edges begin to set.
