Method
Step 1: Prepare the Asparagus
Trim and Cut: Begin by washing the asparagus and trimming the woody ends. Cut the asparagus into 1-inch pieces.
Step 2: Sauté the Asparagus
Heat Oil: In an oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. If you’re using onion, add it now and sauté for about 2-3 minutes until translucent.
Cook Asparagus: Add the asparagus pieces to the skillet. Sauté for about 5-7 minutes until they are tender but still bright green. Season with a pinch of salt and pepper.
Step 3: Mix the Egg Mixture
Whisk Eggs: In a mixing bowl, whisk together the eggs, milk, grated Parmesan cheese, salt, and pepper until well combined.
Step 4: Combine and Cook
Combine Mixtures: Pour the egg mixture over the sautéed asparagus in the skillet. Gently stir to combine.
Cook on Stove: Let the frittata cook on the stove for about 3-4 minutes without stirring, until the edges begin to set.
Step 5: Bake
Bake in Oven: Transfer the skillet to a preheated oven at 375°F (190°C). Bake for about 10-15 minutes, or until the frittata is set and lightly golden on top. You can check for doneness by inserting a knife; it should come out clean.
Step 6: Cool and Serve
Let it Stand: Allow the frittata to cool for about 5 minutes before slicing it into wedges. Garnish with fresh herbs if desired.
