Method
Step 1: Prepare the Ingredients
If using fresh broad beans, blanch them in boiling water for 2-3 minutes, then cool them in ice water and remove the outer skins. If using frozen, simply thaw them.
Finely chop the onion and set aside.
Step 2: Whisk the Eggs
In a large mixing bowl, crack the eggs and whisk them until they are well combined.
Add the grated Parmesan cheese, a pinch of salt, and pepper to taste. Mix thoroughly.
Step 3: Sauté the Onions
In a non-stick skillet, heat the olive oil over medium heat.
Add the chopped onions and sauté for about 5 minutes, or until they become translucent and fragrant.
Step 4: Add the Broad Beans
Add the shelled broad beans to the skillet and stir them with the onions. Cook for an additional 2-3 minutes to warm through.
Step 5: Combine with Egg Mixture
Pour the egg and cheese mixture over the sautéed onions and broad beans in the skillet.
Gently stir with a spatula to ensure the ingredients are evenly distributed.
Step 6: Cook the Frittata
Lower the heat to medium-low and cook the frittata for about 10-12 minutes. You want the edges to set while the center remains slightly runny.
To ensure even cooking, you can occasionally shake the skillet to prevent sticking.
Step 7: Finish Under the Broiler (Optional)
For a nicely browned top, place the skillet under the broiler for 2-3 minutes. Watch it closely to prevent burning.
Step 8: Cool and Serve
Once the frittata is cooked through, remove it from the heat and let it stand for about 5 minutes.
Slice into wedges and serve warm or at room temperature, garnished with fresh mint if desired.
