Instructions
Step 1: Prepare the Ingredients
Wash and Cut the Tomatoes: If using cherry tomatoes, cut them in half. For larger tomatoes, dice them into small pieces.
Crack the Eggs: In a mixing bowl, crack the eggs and whisk them together until well combined.
Step 2: Mix the Egg Mixture
Add Milk and Cheese: Stir in the milk, grated Parmesan cheese, and a pinch of salt and pepper to the eggs. Mix until everything is evenly incorporated.
Step 3: Cook the Tomatoes
Heat the Skillet: In a non-stick skillet, heat the olive oil over medium heat.
Sauté the Tomatoes: Add the halved or diced tomatoes to the skillet. Cook for about 3-4 minutes, until they start to soften.
Step 4: Combine and Cook
Pour in the Egg Mixture: Pour the egg mixture over the tomatoes in the skillet. Allow it to cook undisturbed for 5-7 minutes. You'll see the edges set while the center remains slightly runny.
Step 5: Finish Cooking
Broil (Optional): If you want a nicely browned top, you can place the skillet under a broiler for 2-3 minutes until the top is golden brown. Ensure your skillet is oven-safe!
Check for Doneness: The frittata is done when the center is set and the edges are lightly browned.
Step 6: Let It Stand
Rest the Frittata: Remove from heat and let it stand for about 5 minutes. This allows it to firm up and makes it easier to slice.
Step 7: Serve and Garnish
Slice and Serve: Cut the frittata into wedges. Garnish with fresh herbs like basil or parsley if desired.
Variations
Vegetable Additions: Feel free to add other vegetables like bell peppers, spinach, or onions.
