Equipment

  • Equipment Needed
  • Non-stick skillet (10-12 inches)
  • Mixing bowl
  • Whisk or fork
  • Spatula
  • Oven (if using broiler method)

Ingredients

  • Ingredients
  • 6 large eggs
  • 1 cup cherry tomatoes halved (or 2 medium tomatoes, diced)
  • 1/4 cup grated Parmesan cheese or your preferred cheese
  • 1/4 cup milk or a dairy-free substitute like almond or oat milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  • Instructions
  • Step 1: Prepare the Ingredients
  • Wash and Cut the Tomatoes: If using cherry tomatoes, cut them in half. For larger tomatoes, dice them into small pieces.
  • Crack the Eggs: In a mixing bowl, crack the eggs and whisk them together until well combined.
  • Step 2: Mix the Egg Mixture
  • Add Milk and Cheese: Stir in the milk, grated Parmesan cheese, and a pinch of salt and pepper to the eggs. Mix until everything is evenly incorporated.
  • Step 3: Cook the Tomatoes
  • Heat the Skillet: In a non-stick skillet, heat the olive oil over medium heat.
  • Sauté the Tomatoes: Add the halved or diced tomatoes to the skillet. Cook for about 3-4 minutes, until they start to soften.
  • Step 4: Combine and Cook
  • Pour in the Egg Mixture: Pour the egg mixture over the tomatoes in the skillet. Allow it to cook undisturbed for 5-7 minutes. You'll see the edges set while the center remains slightly runny.
  • Step 5: Finish Cooking
  • Broil (Optional): If you want a nicely browned top, you can place the skillet under a broiler for 2-3 minutes until the top is golden brown. Ensure your skillet is oven-safe!
  • Check for Doneness: The frittata is done when the center is set and the edges are lightly browned.
  • Step 6: Let It Stand
  • Rest the Frittata: Remove from heat and let it stand for about 5 minutes. This allows it to firm up and makes it easier to slice.
  • Step 7: Serve and Garnish
  • Slice and Serve: Cut the frittata into wedges. Garnish with fresh herbs like basil or parsley if desired.
  • Variations
  • Vegetable Additions: Feel free to add other vegetables like bell peppers, spinach, or onions.
  • Cheese Options: Substitute Parmesan with feta or mozzarella for different flavor profiles.
  • Herbs and Spices: Add herbs like oregano or spices like red pepper flakes for added flavor.
