Equipment

  • Equipment Needed
  • Frying pan
  • Mixing bowl
  • Spoon or ice cream scooper
  • Paper towels (for draining excess oil)

Ingredients

  • Ingredients:
  • 1 lb 450g ground meat (beef or pork works well, or a mix of both)
  • 1 small onion finely chopped
  • 2 eggs
  • 1/2 cup breadcrumbs use gluten-free if needed
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 2 tbsp fresh parsley chopped
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying
  • Lemon wedges optional, for serving

Instructions

  • Method:
  • Prepare the mixture: In a large mixing bowl, combine the ground meat, finely chopped onion, eggs, breadcrumbs, Parmesan cheese, milk, parsley, garlic powder, salt, and pepper. Mix everything thoroughly until well combined.
  • Form the fritters: Using your hands or a spoon, take small amounts of the meat mixture and shape them into round fritters, about the size of a golf ball.
  • Heat the oil: In a large frying pan, heat enough vegetable oil to cover the bottom of the pan. You want the oil to be hot but not smoking, about 350°F (175°C).
  • Fry the fritters: Carefully drop the fritters into the hot oil, making sure not to overcrowd the pan. Fry them for about 3-4 minutes on each side or until they turn golden brown and crispy.
  • Drain the fritters: Once cooked, use a slotted spoon to remove the fritters and place them on a plate lined with paper towels to absorb any excess oil.
  • Serve: Serve your Frittelle di Carne hot with a squeeze of lemon for a refreshing touch. They pair wonderfully with a side salad or roasted vegetables.
  • Variations:
  • Vegetarian Option: Substitute the ground meat with mashed potatoes or beans for a meat-free version.
  • Spicy Frittelle: Add chili flakes to the mixture for a spicy kick.
  • Cheese Lover's: Incorporate shredded mozzarella or provolone into the fritter mixture for a gooey center.
  • Tips and Substitutions:
  • Gluten-Free: Use gluten-free breadcrumbs or crushed rice crackers as a substitute.
  • Dairy-Free: Replace the milk with a plant-based alternative, and omit the Parmesan or use a dairy-free cheese.
  • Frying: If you want to reduce oil absorption, consider lightly coating the fritters in flour before frying.
