  • Prepare the Cauliflower
  • Boil the Cauliflower: Fill a large pot with water and bring it to a boil. Add a pinch of salt. Cut the cauliflower into florets and add them to the boiling water. Cook for about 8-10 minutes until tender.
  • Drain and Cool: Drain the cauliflower in a colander and let it cool for a few minutes. You want it cool enough to handle, but still warm.
  • Mash the Cauliflower
  • Mash with a Fork: Once cooled, place the cauliflower in a mixing bowl. Using a fork or potato masher, mash the cauliflower until mostly smooth, leaving some small chunks for texture.
  • Mix the Batter
  • Add Ingredients: To the mashed cauliflower, add the eggs, grated Parmesan cheese, flour, garlic powder, onion powder, salt, and pepper. If you're using parsley, add it now too.
  • Combine: Mix everything together until well combined. The mixture should be thick enough to hold its shape.
  • Prepare for Frying
  • Heat the Oil: In a frying pan, heat about 1/4 inch of vegetable oil over medium heat. You can test the oil’s readiness by dropping a small spoonful of batter into the oil; it should sizzle and rise to the surface.
  • Fry the Fritters
  • Form the Fritters: Using a tablespoon, scoop out portions of the mixture and gently place them in the hot oil. Flatten them slightly with the back of the spoon.
  • Cook: Fry for about 3-4 minutes on each side until golden brown and crispy. Avoid overcrowding the pan; you may need to fry in batches.
  • Drain and Serve
  • Drain Excess Oil: Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil.
  • Serve Warm: Enjoy them warm with a sprinkle of additional Parmesan or your favorite dipping sauce, such as marinara or aioli.
