Method
Step 1: Prepare the Batter
In a mixing bowl, whisk together the flour, baking powder, salt, black pepper, and paprika (if using). This will ensure even distribution of the dry ingredients.
In a separate bowl, beat the eggs and then add the milk. Mix well.
Combine the wet ingredients into the dry ingredients, stirring until just combined. Do not overmix; a few lumps are okay.
Gently fold in the corn kernels and Parmesan cheese until evenly distributed.
Step 2: Rest the Batter
Allow the batter to sit for about 10 minutes. This helps the flour absorb the liquid and results in a fluffier fritter.
Step 3: Heat the Oil
In a frying pan, heat about 1/2 inch of vegetable oil over medium heat. To check if the oil is hot enough, drop a small amount of batter into the oil; if it sizzles, it’s ready.
Step 4: Fry the Fritters
Using a spoon or a small ice cream scoop, carefully drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan.
Fry for 2-3 minutes on each side or until golden brown. Flip them gently using a slotted spoon.
Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil.
Step 5: Serve and Enjoy!
Serve the Frittelle di Mais warm, garnished with a sprinkle of additional cheese or fresh herbs if desired. They pair beautifully with a dipping sauce like aioli or a simple marinara.
