Method
Prepare the Apples
Peel and grate or dice the apples. If you prefer a chunkier texture, diced apples work well, while grated apples will create a softer fritter. Set them aside in a bowl.
Make the Batter
In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until well combined.
In another bowl, mix the egg, milk, and vanilla extract until smooth.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; it’s okay if the batter is slightly lumpy.
Fold in the prepared apples gently.
Heat the Oil
In a frying pan or deep fryer, heat about 2 inches of oil over medium heat. You can test if the oil is ready by dropping a small spoonful of batter into it; if it sizzles and rises to the surface, it’s ready for frying.
Fry the Fritters
Using a tablespoon or a small ice cream scoop, drop spoonfuls of batter into the hot oil, making sure not to overcrowd the pan. Fry until golden brown, about 2-3 minutes on each side.
Use a slotted spoon to remove the fritters and place them on paper towels to drain excess oil.
Serve
Dust with powdered sugar before serving, if desired. Enjoy warm!
