Method
Step 1: Prepare the Batter
In a large mixing bowl, combine the well-drained ricotta cheese and eggs. Whisk until smooth.
Add the granulated sugar, lemon zest, vanilla extract, and a pinch of salt. Mix well.
In a separate bowl, whisk together the flour and baking powder.
Gradually add the flour mixture to the ricotta mixture, stirring until just combined. Be careful not to overmix.
Step 2: Heat the Oil
In a frying pan, heat about 1 inch of oil over medium heat. The oil should be hot enough that a small drop of batter sizzles when added.
Step 3: Fry the Fritters
Using a tablespoon, drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan.
Fry for about 2-3 minutes on each side, or until golden brown.
Use a slotted spoon to remove the fritters and transfer them to a paper towel-lined plate to drain excess oil.
Step 4: Serve
Once drained, you can dust the fritters with powdered sugar and serve warm. Garnish with lemon slices or mint leaves if desired.
