Method
Step 1: Prepare the Zucchini
Grate the Zucchini: Using a grater or a food processor, grate the zucchinis. Place the grated zucchini in a colander and sprinkle with salt. Let it sit for about 10 minutes. This helps to draw out excess moisture, making the fritters crispier.
Step 2: Mix the Batter
Combine Ingredients: In a mixing bowl, combine the flour, grated Parmesan cheese, garlic, black pepper, and red pepper flakes (if using). Mix well.
Add Egg: Crack the egg into the mixture and stir until everything is well combined.
Step 3: Incorporate the Zucchini
Squeeze and Add Zucchini: After 10 minutes, squeeze the grated zucchini to remove excess liquid and then add it to the mixing bowl. If you’re using herbs, add them now and stir until well incorporated.
Step 4: Heat the Oil
Heat Oil: In a skillet or frying pan, heat about 1/4 inch of olive oil over medium heat. You want the oil hot enough so that a drop of batter sizzles when added.
Step 5: Fry the Fritters
Shape and Cook: Using a spoon or your hands, form small patties from the batter and carefully place them in the hot oil. Don’t overcrowd the pan—fry in batches if necessary. Cook each side for about 3-4 minutes or until golden brown and crispy.
Drain: Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil.
Step 6: Serve
Enjoy: Serve the fritters warm, either plain or with a dipping sauce like marinara or tzatziki.
