Frittelle di Zucchine

Course Appetizer, Snack
Cuisine Italian

Equipment

  • Equipment Needed
  • Grater or food processor
  • Mixing bowl
  • Measuring cups and spoons
  • Skillet or frying pan
  • Spatula
  • Paper towels (for draining excess oil)
  • Large plate

Ingredients

  • Ingredients
  • 2 medium zucchinis grated
  • 1 teaspoon salt
  • 1 cup all-purpose flour or gluten-free flour as a substitute
  • 1 large egg
  • 1/4 cup grated Parmesan cheese or nutritional yeast for a vegan option
  • 1 clove garlic minced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • Fresh herbs like parsley or basil, chopped (optional)
  • Olive oil for frying

Instructions

  • Method
  • Step 1: Prepare the Zucchini
  • Grate the Zucchini: Using a grater or a food processor, grate the zucchinis. Place the grated zucchini in a colander and sprinkle with salt. Let it sit for about 10 minutes. This helps to draw out excess moisture, making the fritters crispier.
  • Step 2: Mix the Batter
  • Combine Ingredients: In a mixing bowl, combine the flour, grated Parmesan cheese, garlic, black pepper, and red pepper flakes (if using). Mix well.
  • Add Egg: Crack the egg into the mixture and stir until everything is well combined.
  • Step 3: Incorporate the Zucchini
  • Squeeze and Add Zucchini: After 10 minutes, squeeze the grated zucchini to remove excess liquid and then add it to the mixing bowl. If you’re using herbs, add them now and stir until well incorporated.
  • Step 4: Heat the Oil
  • Heat Oil: In a skillet or frying pan, heat about 1/4 inch of olive oil over medium heat. You want the oil hot enough so that a drop of batter sizzles when added.
  • Step 5: Fry the Fritters
  • Shape and Cook: Using a spoon or your hands, form small patties from the batter and carefully place them in the hot oil. Don’t overcrowd the pan—fry in batches if necessary. Cook each side for about 3-4 minutes or until golden brown and crispy.
  • Drain: Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil.
  • Step 6: Serve
  • Enjoy: Serve the fritters warm, either plain or with a dipping sauce like marinara or tzatziki.
  • Variations
  • Herbed Fritters: Add fresh herbs like dill, chives, or mint for added flavor.
  • Spicy Fritters: Incorporate finely chopped jalapeños or a dash of hot sauce for a kick.
  • Cheese Variations: Try using feta cheese instead of Parmesan for a different taste.
