Method
Step 1: Prepare the Vegetables
Wash and Cut the Vegetables: Clean the zucchini, bell pepper, carrot, cauliflower, and broccoli. Slice or cut them into thin strips or small florets to ensure even cooking.
Step 2: Make the Batter
Mix Dry Ingredients: In a mixing bowl, whisk together the flour, baking powder, salt, black pepper, and garlic powder until well combined.
Add Sparkling Water: Gradually pour in the cold sparkling water while whisking to create a smooth batter. The batter should be thick enough to coat the vegetables but still runny. Add more water if needed.
Step 3: Heat the Oil
Prepare the Frying Oil: In a frying pan or deep fryer, heat about 2 inches of oil over medium-high heat. To test if the oil is hot enough, drop a small amount of batter into the oil; it should sizzle and rise to the surface.
Step 4: Fry the Vegetables
Coat the Vegetables: Dip each piece of vegetable into the batter, ensuring it’s fully coated.
Fry in Batches: Carefully place the coated vegetables into the hot oil. Don’t overcrowd the pan; fry in batches to maintain the oil temperature.
Cook Until Golden: Fry for about 3-4 minutes or until golden brown and crispy. Use a slotted spoon to remove the fritters and place them on a plate lined with paper towels to absorb excess oil.
Step 5: Serve
Garnish and Enjoy: Serve the fritters hot, garnished with fresh herbs or a sprinkle of sea salt. They pair wonderfully with a dipping sauce, like marinara or garlic aioli.
