  • Add Sparkling Water: Gradually pour in the cold sparkling water while whisking to create a smooth batter. The batter should be thick enough to coat the vegetables but still runny. Add more water if needed.
  • Step 3: Heat the Oil
  • Prepare the Frying Oil: In a frying pan or deep fryer, heat about 2 inches of oil over medium-high heat. To test if the oil is hot enough, drop a small amount of batter into the oil; it should sizzle and rise to the surface.

  • Coat the Vegetables: Dip each piece of vegetable into the batter, ensuring it’s fully coated.
  • Fry in Batches: Carefully place the coated vegetables into the hot oil. Don’t overcrowd the pan; fry in batches to maintain the oil temperature.
