Step 1: Prepare the Dough
Activate the yeast: In a small bowl, mix warm water, sugar, and yeast. Let it sit for 5 minutes until foamy.
Mix the dry ingredients: In a large bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
Knead the dough: Mix until a sticky dough forms. Transfer to a floured surface and knead for 8–10 minutes until smooth and elastic.
Let it rise: Place the dough in a lightly oiled bowl, cover with a kitchen towel, and let it rise for 1 hour or until doubled in size.
Step 2: Preheat the Oven
Preheat your oven to 500°F (260°C) and place a pizza stone or baking sheet inside to heat up.
Step 3: Assemble the Pizza
Shape the dough: Once the dough has risen, punch it down and divide it into two portions. Roll out one portion into a 12-inch circle.
Add the base toppings: Spread mozzarella evenly over the dough, leaving a ½-inch border. Add small dollops of stracchino cheese.
Layer the vegetables: Scatter cherry tomatoes across the pizza.
Step 4: Bake the Pizza
Transfer the pizza to the hot stone or sheet and bake for 12–15 minutes, or until the crust is golden and the cheese is bubbly.
Step 5: Add Fresh Toppings
Remove the pizza from the oven and let it cool for 5 minutes.
Top with fresh arugula and a sprinkle of grated Parmesan. Drizzle with olive oil before serving.

Gluten-Free: Use gluten-free all-purpose flour and add 1 tsp xanthan gum to help with elasticity.
Vegan Option: Substitute mozzarella and stracchino with vegan cheese alternatives. Omit Parmesan or use nutritional yeast.
