Cook the Pasta
Boil Water: In a large pot, bring salted water to a boil.
Add Pasta: Once boiling, add your pasta and cook according to package instructions until al dente.
Reserve Water: Before draining, reserve about 1 cup of the pasta water for later use.
Drain: Drain the pasta and set aside.
Prepare the Sauce
Melt Butter: In a large skillet or saucepan, melt the butter over medium heat.
Sauté Garlic: Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
Add Cream: Pour in the heavy cream and stir well. Allow it to simmer for about 3-4 minutes, stirring occasionally.
Incorporate Gorgonzola: Add the crumbled Gorgonzola cheese to the skillet. Stir until the cheese has melted and the sauce is creamy. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.
Season: Taste the sauce and add salt and black pepper as needed.
Combine Pasta and Sauce
Mix Together: Add the drained pasta to the skillet with the Gorgonzola sauce. Toss gently to coat the pasta evenly in the sauce.
Heat Through: Let the pasta and sauce heat together for another minute to meld the flavors.
Serve
Plate: Serve the pasta hot, garnished with freshly chopped parsley if desired.
