Method
Cook the Pasta:
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. This usually takes about 8-10 minutes.
Prepare the Sauce:
While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, but not browned.
Combine Lemon and Cream:
Add the lemon juice and zest to the skillet, stirring well. Then pour in the heavy cream, and bring the mixture to a gentle simmer. Let it cook for about 2-3 minutes until slightly thickened.
Add Cheese:
Stir in the grated Parmesan cheese, mixing until melted and creamy. Season with salt and black pepper to taste.
Mix with Pasta:
Once the pasta is cooked, reserve about 1/2 cup of the pasta cooking water, then drain the pasta. Add the drained pasta to the skillet with the lemon sauce. Toss well to coat the pasta, adding a little reserved pasta water if necessary to loosen the sauce.
Serve:
Serve immediately, garnished with extra Parmesan cheese and fresh herbs if desired. Enjoy your Pasta al Limone!
