Step 1: Boil the Pasta
Fill a large pot with water and bring it to a boil. Add a generous pinch of salt.
Add the pasta and cook according to the package instructions until al dente. Stir occasionally to prevent sticking.
Step 2: Prepare the Asparagus
While the pasta is cooking, heat the olive oil in a frying pan over medium heat.
Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
Add the chopped asparagus to the pan and sauté for 3-5 minutes until tender but still crisp. Season with a pinch of salt and pepper.
Step 3: Combine Ingredients
Once the pasta is cooked, reserve about 1 cup of pasta water and then drain the pasta in a colander.
Add the drained pasta to the frying pan with the asparagus. Toss to combine.
Pour in the heavy cream and add the crumbled gorgonzola cheese. Stir everything together, allowing the cheese to melt and create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.
Step 4: Serve
Taste and adjust the seasoning with more salt and pepper if needed.
Serve hot, garnished with grated Parmesan cheese and fresh parsley if desired.
