  • Step 1: Boil the Pasta
  • Fill a large pot with water and bring it to a boil. Add a generous pinch of salt.
  • Add the pasta and cook according to the package instructions until al dente. Stir occasionally to prevent sticking.
  • Step 2: Prepare the Asparagus
  • While the pasta is cooking, heat the olive oil in a frying pan over medium heat.
  • Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  • Add the chopped asparagus to the pan and sauté for 3-5 minutes until tender but still crisp. Season with a pinch of salt and pepper.
  • Step 3: Combine Ingredients
  • Once the pasta is cooked, reserve about 1 cup of pasta water and then drain the pasta in a colander.
  • Add the drained pasta to the frying pan with the asparagus. Toss to combine.
  • Pour in the heavy cream and add the crumbled gorgonzola cheese. Stir everything together, allowing the cheese to melt and create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.
  • Step 4: Serve
  • Taste and adjust the seasoning with more salt and pepper if needed.
  • Serve hot, garnished with grated Parmesan cheese and fresh parsley if desired.
