Instructions
Boil the Pasta:
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta in a colander and set aside.
Cook the Sausage:
While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Remove the sausage from its casings and add it to the skillet. Break it up with a wooden spoon and cook until browned and cooked through, about 5-7 minutes.
Add Garlic and Broccoli:
Once the sausage is cooked, add the minced garlic to the skillet and sauté for about 1 minute until fragrant. Then, add the broccoli florets to the skillet. If using fresh broccoli, you may want to add a splash of water to help steam the broccoli. Cook for an additional 5 minutes, stirring occasionally, until the broccoli is tender.
Combine Pasta and Sausage Mixture:
Add the drained pasta to the skillet with the sausage and broccoli. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency. Season with salt, pepper, and red pepper flakes (if using).
Serve:
Divide the pasta among serving plates, top with freshly grated Parmesan cheese and garnish with basil or parsley if desired. Enjoy your Pasta con Salsiccia e Broccoli!
