Method
Boil the Pasta:
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. This usually takes about 8-10 minutes. Reserve about 1 cup of pasta water before draining.
Sauté the Garlic:
While the pasta is cooking, heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant. Be careful not to burn the garlic.
Add the Tomatoes:
Add the halved cherry tomatoes to the skillet. Cook for about 5 minutes, stirring occasionally, until they soften and begin to release their juices.
Incorporate Spinach:
Stir in the fresh spinach (or thawed frozen spinach) into the skillet. Cook until the spinach wilts down, which should take about 2-3 minutes.
Combine Pasta and Sauce:
Add the drained pasta to the skillet with the spinach and tomatoes. Toss everything together, adding reserved pasta water a little at a time until the desired consistency is reached.
Season and Serve:
Add grated Parmesan cheese, salt, pepper, and red pepper flakes (if using) to taste. Mix well to combine and ensure everything is coated with the sauce.
Plate and Enjoy:
Serve the pasta hot, garnished with extra Parmesan cheese and a drizzle of olive oil if desired.
