Method
Cook the Pasta:
Bring a large pot of salted water to a boil.
Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of the pasta water before draining.
Sauté Garlic and Tomatoes:
In a large skillet, heat the olive oil over medium heat.
Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
Add the cherry tomatoes (or canned tomatoes) and cook for about 5 minutes, until they begin to soften.
Add Tuna and Capers:
Stir in the drained tuna and capers, gently breaking up the tuna with a fork.
Cook for another 2-3 minutes, allowing the flavors to meld. Season with salt, pepper, and red pepper flakes if using.
Combine Pasta and Sauce:
Add the drained pasta to the skillet and toss to combine. If the mixture seems dry, gradually add reserved pasta water until you reach your desired consistency.
Serve:
Remove from heat and sprinkle with fresh parsley.
Serve hot, with grated cheese on top if desired.
