Step-by-Step Instructions
Prepare the Dough
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
In a large mixing bowl, whisk together flour and salt. Make a well in the center and add the yeast mixture and olive oil.
Mix until a dough begins to form. Knead on a lightly floured surface for about 5-7 minutes until smooth and elastic.
First Rise
Place the dough in a lightly greased bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
Prepare the Topping
While the dough rises, heat olive oil in a skillet over medium heat. Add sliced Tropea onions and sauté for about 10-12 minutes until soft and caramelized. If desired, stir in balsamic vinegar, salt, and pepper. Set aside to cool.
Shape the Pizza
Preheat your oven to 475°F (245°C).
Once the dough has risen, punch it down and turn it onto a floured surface. Roll it out into a 12-inch circle (or to your desired thickness).
Transfer the dough to a baking sheet lined with parchment paper or a preheated pizza stone.
Assemble the Pizza
Sprinkle half of the mozzarella cheese over the dough. Layer the caramelized onions on top, followed by the remaining cheese. Season with salt and pepper.
Bake the Pizza
Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
Serve
Remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired. Slice and enjoy your homemade Pizza con Cipolla di Tropea!
