Method
Step 1: Prepare the Dough
Activate the Yeast: In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
Mix the Ingredients: Add flour, salt, and olive oil to the yeast mixture. Stir with a wooden spoon until a dough forms.
Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
Let it Rise: Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 30 minutes or until it doubles in size.
Step 2: Preheat the Oven
Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.
Step 3: Prepare the Toppings
Slice the Pears: While the dough is rising, thinly slice the pears using a sharp knife.
Prepare Cheese: Crumble the Gorgonzola and shred the mozzarella cheese if using.
Step 4: Assemble the Pizza
Roll Out the Dough: Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a 12-inch circle or your desired thickness.
Transfer to Baking Sheet: Carefully place the rolled dough on a piece of parchment paper. This will make transferring the pizza to the oven easier.
Add Toppings: Spread a layer of Gorgonzola cheese over the dough, then arrange the sliced pears on top. If using mozzarella, sprinkle it over the pears.

Drizzle Honey (Optional): Once baked, remove the pizza from the oven and drizzle with honey if desired.
