Step-by-Step Instructions
Step 1: Prepare the Dough
In a small bowl, mix the warm water with sugar and add the yeast. Let it sit for 5-10 minutes until foamy (this shows the yeast is active).
In a large mixing bowl, combine the flour and salt.
Pour the yeast mixture and olive oil into the flour, mixing until a dough forms. Knead the dough on a floured surface for 5-7 minutes until it’s smooth and elastic.
Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.
Step 2: Preheat the Oven
Preheat your oven to 475°F (250°C). If you have a pizza stone, place it in the oven to heat as well; otherwise, a baking sheet works fine.
Step 3: Prepare the Toppings
In a small pan, heat 1 tablespoon olive oil over medium heat.
Add minced garlic and sliced porcini mushrooms. Sauté until the mushrooms soften, about 3-4 minutes. Season with salt and pepper and set aside.
Step 4: Shape the Pizza Dough
Once the dough has risen, punch it down to remove air bubbles, and roll it out on a floured surface to your desired thickness (I recommend about 1/4 inch for a thin crust).
Transfer the rolled-out dough to a pizza peel or a baking sheet lined with parchment paper.
Step 5: Assemble the Pizza
Spread a thin layer of tomato sauce evenly over the dough.
Sprinkle the mozzarella cheese on top, followed by the sautéed porcini mushrooms.
Add a touch more salt and pepper, and garnish with fresh thyme or rosemary if desired.
Step 6: Bake the Pizza
Carefully transfer the pizza to your preheated stone or baking sheet and bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
Step 7: Let the Pizza Rest and Serve
Allow the pizza to cool for 5 minutes before slicing. This helps the cheese set a bit, making it easier to cut and serve.
Variations and Substitutions
Gluten-Free Option: Substitute all-purpose flour with a gluten-free pizza flour blend.
Vegan/Dairy-Free: Use plant-based mozzarella or a cheese substitute that melts well.
Different Mushrooms: If porcini mushrooms are unavailable, try cremini or shiitake mushrooms for a similar earthy flavor.
