Step 1: Prepare the Dough
Activate Yeast: In a mixing bowl, combine warm water, sugar, and yeast. Allow it to sit for about 5-10 minutes until foamy.
Mix Ingredients: Add the flour, salt, and olive oil to the yeast mixture. Mix until a dough begins to form.
Knead the Dough: Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
Let It Rise: Form the dough into a ball and place it in a lightly greased bowl. Cover it with a damp cloth and let it rise in a warm place for about 30 minutes, or until doubled in size.
Step 2: Prepare the Toppings
Cook Radicchio: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped radicchio, season with salt and pepper, and sauté for about 5 minutes until softened. Set aside.
Preheat Oven: If using a pizza stone, place it in the oven and preheat to 475°F (245°C) for at least 30 minutes. If using a baking sheet, simply preheat the oven.
Step 3: Assemble the Pizza
Shape the Dough: After the dough has risen, punch it down and roll it out on a floured surface to your desired thickness (about ¼ inch for a classic pizza).
Add Toppings: Transfer the rolled-out dough to a pizza peel or baking sheet. Start by sprinkling the mozzarella cheese over the base, followed by the sautéed radicchio. Finally, add the crumbled gorgonzola cheese evenly over the top.
Step 4: Bake the Pizza
Transfer to Oven: If using a pizza stone, carefully slide the pizza onto the stone. If using a baking sheet, place it directly into the oven.
Bake: Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbling.
Garnish and Serve: Once done, remove the pizza from the oven, let it cool for a couple of minutes, then garnish with fresh herbs if desired. Slice and enjoy!
