Step 1: Prepare the Dough

Let It Rise: Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
Step 2: Preheat the Oven
Prepare Your Oven: Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat.
Step 3: Shape the Pizza
Roll Out the Dough: Once the dough has risen, punch it down and transfer it to a floured surface. Using a rolling pin, roll it out into a round shape, about 12 inches in diameter.
Transfer to Baking Sheet: Place the rolled-out dough onto a baking sheet lined with parchment paper or directly onto the preheated pizza stone.
Step 4: Add Toppings
Spread the Cheese: Sprinkle the shredded mozzarella evenly over the dough.
Add the Speck: Lay the slices of speck on top of the cheese.
Drizzle with Olive Oil: Drizzle about 1 tablespoon of olive oil over the top and season with freshly cracked black pepper.
Step 5: Bake the Pizza
Bake: Place the pizza in the oven (or on the pizza stone) and bake for 10-15 minutes, or until the crust is golden brown and the cheese is bubbling.
Add the Arugula: Once baked, remove the pizza from the oven and immediately top with fresh arugula. Drizzle with additional olive oil and balsamic glaze, if using.
Step 6: Serve
