Step 1: Prepare the Dough
In a mixing bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
Add the olive oil and salt to the yeast mixture, then gradually add the flour, mixing until a dough forms.
Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.
Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm area for about 1 hour, or until doubled in size.
Step 2: Prepare the Toppings
While the dough is rising, preheat your oven to 475°F (245°C).
Heat 2 tbsp of olive oil in a pan over medium heat. Add the sliced zucchini and sauté for about 5-7 minutes, until tender. Season with salt, pepper, and oregano.
Step 3: Shape the Pizza
Once the dough has risen, punch it down and roll it out on a floured surface into a round shape about 12 inches in diameter.
Transfer the rolled dough onto a baking sheet lined with parchment paper or a pizza stone.
Step 4: Assemble the Pizza
Sprinkle the shredded mozzarella cheese evenly over the dough.
Distribute the sautéed zucchini over the mozzarella.
Crumble the feta cheese on top and season with a little more oregano, salt, and pepper.
Step 5: Bake
Bake in the preheated oven for 15-20 minutes, or until the crust is golden and the cheese is bubbly.
Remove from the oven and let it cool for a few minutes before garnishing with fresh basil leaves if desired.
