  • 1 medium onion sliced
  • 1 cup dry white wine such as Pinot Grigio or Sauvignon Blanc

  • 1 teaspoon dried thyme or 2 teaspoons fresh thyme
  • 1 teaspoon dried rosemary or 2 teaspoons fresh rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

  • Method
  • Prepare the Chicken:
  • Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.
  • Sear the Chicken:
  • In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs, skin side down. Sear for about 5-7 minutes until the skin is golden brown and crispy. Flip the chicken and cook for an additional 5 minutes. Remove the chicken from the skillet and set aside.
  • Sauté Aromatics:
  • In the same skillet, add the sliced onion and minced garlic. Sauté for about 3-4 minutes until the onions become translucent and fragrant, scraping up any brown bits left from the chicken.
  • Deglaze with Wine:
  • Carefully pour in the white wine, stirring to combine and deglaze the pan. Allow it to simmer for about 5 minutes to reduce slightly.
  • Add Broth and Herbs:
  • Add the chicken broth, thyme, and rosemary to the skillet. Stir to combine. Return the chicken thighs to the skillet, skin side up, and spoon some of the sauce over the chicken.
  • Simmer:
  • Cover the skillet and reduce the heat to low. Let it simmer for about 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
  • Rest and Serve:
  • Once cooked, remove the skillet from the heat and let it stand for about 5 minutes. This allows the juices to redistribute. Garnish with fresh parsley before serving.
