Step 1: Prepare the Marinade
In a mixing bowl, combine the olive oil, lemon juice, minced garlic, rosemary, thyme, parsley, salt, and pepper.
Whisk until well blended.
Step 2: Marinate the Chicken
Place the chicken breasts in a large resealable bag or a shallow dish.
Pour the marinade over the chicken, ensuring it is evenly coated.
Seal the bag or cover the dish with plastic wrap and refrigerate for at least 30 minutes (up to 4 hours for more flavor).
Step 3: Preheat the Grill
Preheat your grill to medium-high heat (about 400°F or 200°C).
If using a grill pan, place it on the stovetop over medium-high heat.
Step 4: Grill the Chicken
Remove the chicken from the marinade and let any excess marinade drip off. Discard the marinade.
Place the chicken breasts on the hot grill.
Grill for about 6-8 minutes on one side, then flip and grill for another 6-8 minutes, or until the internal temperature reaches 165°F (75°C).
Step 5: Let the Chicken Rest
Remove the chicken from the grill and let it stand for about 10 minutes. This helps the juices redistribute and keeps the chicken moist.
Step 6: Serve
Slice the chicken and serve with your choice of side dishes such as grilled vegetables, salad, or pasta. Garnish with additional fresh herbs if desired.
