Method
Step 1: Prepare the Marinade
In a mixing bowl, whisk together the lemon juice, lemon zest, olive oil, minced garlic, oregano, salt, and pepper. This marinade will infuse the chicken with flavor and keep it moist while grilling.
Step 2: Marinate the Chicken 2. Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for a stronger flavor.
Step 3: Preheat the Grill 3. Preheat your grill to medium-high heat. If you’re using a charcoal grill, make sure the coals are hot and covered with ash.
Step 4: Grill the Chicken 4. Remove the chicken from the marinade, letting any excess drip off. Discard the remaining marinade. Place the chicken on the grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).
Step 5: Rest and Serve 5. Once cooked, remove the chicken from the grill and let it rest for 5 minutes. This allows the juices to redistribute, keeping the chicken tender and juicy.
Step 6: Garnish and Enjoy 6. Slice the chicken and garnish with fresh parsley if desired. Serve with a side of grilled vegetables or a light salad for a complete meal.
