Method
Step 1: Prepare the Ingredients
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the ground meat, breadcrumbs, Parmesan cheese, eggs, milk, chopped onion, minced garlic, cooked spinach (if using), oregano, basil, salt, and pepper. Mix thoroughly until well combined.
Step 2: Shape the Polpettone
Lightly grease a baking dish or loaf pan. Transfer the meat mixture into the pan, shaping it into a loaf.
If you like, you can create a well in the center and fill it with more cooked vegetables or cheese for a surprise inside!
Step 3: Bake
Pour the marinara sauce over the top of the meatloaf.
Cover with foil and bake for about 45 minutes.
Remove the foil and continue baking for another 15-20 minutes, or until the internal temperature reaches 160°F (70°C). The top should be nicely browned.
Step 4: Let It Rest
Once done, remove the Polpettone from the oven and let it rest for about 10 minutes. This helps retain the juices and makes it easier to slice.
Step 5: Serve
Slice the Polpettone and serve it warm, garnished with fresh parsley. It pairs beautifully with mashed potatoes, a salad, or crusty bread.
