  • 2 tablespoons vegetable oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup mixed vegetables peas, carrots, bell peppers; fresh or frozen
  • 2 large eggs lightly beaten
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Variations
  • Protein Additions: Include diced chicken shrimp, or tofu for added protein.
  • Vegetarian/Vegan: Omit eggs and use tofu or chickpeas as a protein substitute.
  • Spice it Up: Add chili flakes or fresh chili for a bit of heat.

Instructions

  • Step-by-Step Method
  • Prepare the Ingredients
  • Dice the onion and garlic, and chop any vegetables you're using into small pieces.
  • Heat the Pan
  • In a large frying pan or wok, heat the vegetable oil over medium-high heat.
  • Sauté Aromatics
  • Add the diced onion and minced garlic to the pan. Sauté for about 2-3 minutes, or until the onion becomes translucent.
  • Add Vegetables
  • Stir in the mixed vegetables and cook for another 3-4 minutes until they are tender but still crisp.
  • Scramble the Eggs
  • Push the vegetable mixture to the side of the pan. Pour the beaten eggs into the empty side and scramble them until fully cooked.
  • Combine Rice
  • Add the cooked rice to the pan, mixing everything together well. Break up any clumps of rice as you stir.
  • Flavor the Dish
  • Pour the soy sauce and sesame oil over the rice mixture. Stir to combine, ensuring all ingredients are well coated. Season with salt and pepper to taste.
  • Finish and Serve
  • Remove the pan from heat and garnish with chopped green onions. Serve hot and enjoy.
