Course Main Course
Cuisine Italian

Equipment

  • Equipment Needed
  • Grill (outdoor or stovetop)
  • Mixing bowl
  • Whisk or fork
  • Tongs
  • Serving platter
  • Knife and cutting board

Ingredients

  • Ingredients
  • For the Scampi:
  • 1 pound large shrimp peeled and deveined (preferably wild-caught)
  • 4 tablespoons olive oil
  • 4 cloves garlic minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 teaspoon red pepper flakes adjust to taste
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley chopped (for garnish)

Instructions

  • Method
  • Step 1: Prepare the Marinade
  • Mix Ingredients: In a mixing bowl, combine olive oil, minced garlic, lemon zest, lemon juice, red pepper flakes, salt, and pepper. Whisk together until well blended.
  • Step 2: Marinate the Shrimp
  • Add Shrimp: Add the peeled and deveined shrimp to the marinade. Toss gently to ensure all the shrimp are well coated.
  • Marinate: Let the shrimp marinate for at least 15 minutes, but no more than 30 minutes, to prevent the shrimp from becoming too soft due to the lemon juice.
  • Step 3: Preheat the Grill
  • Heat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). If using a stovetop grill pan, ensure it is hot before cooking.
  • Step 4: Grill the Shrimp
  • Grill Shrimp: Using tongs, place the marinated shrimp on the grill. Cook for about 2-3 minutes on each side, or until they turn pink and opaque. Be careful not to overcook the shrimp, as they can become tough.
  • Step 5: Serve
  • Garnish and Serve: Remove the shrimp from the grill and place them on a serving platter. Sprinkle with fresh parsley for garnish and serve immediately with extra lemon wedges on the side.
  • Variations
  • Herb-Infused: Add a tablespoon of fresh herbs like basil or thyme to the marinade for a different flavor profile.
  • Spicy Kick: For a spicier version, add more red pepper flakes or a splash of hot sauce to the marinade.
  • Veggie Addition: Grill some vegetables, like zucchini or bell peppers, alongside the shrimp for a complete meal.
