Method
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and line your 9-inch round cake pan with parchment paper to prevent sticking.
Step 2: Combine Wet Ingredients
In a mixing bowl, whisk together the eggs, honey, and vegetable oil (or melted butter) until well combined. If you’re using lemon zest, add it now for a refreshing flavor.
Step 3: Mix Dry Ingredients
In a separate bowl, combine the almond flour, all-purpose flour, sugar, baking powder, and salt. Make sure to mix well to distribute the baking powder evenly.
Step 4: Combine Wet and Dry Mixtures
Gradually add the dry mixture into the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are perfectly fine.
Step 5: Bake the Cake
Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for about 30 minutes or until a toothpick inserted in the center comes out clean.
Step 6: Prepare the Glaze (Optional)
While the cake is baking, you can prepare the glaze. In a small saucepan, combine honey and water. Heat over medium heat until the mixture is warm and slightly thickened. Stir in the vanilla extract and set aside.
Step 7: Cool and Glaze the Cake
Once the cake is done baking, let it cool in the pan for about 10 minutes before transferring it to a cooling rack. If you made the glaze, brush it over the warm cake for added sweetness and shine.
Step 8: Serve
Allow the cake to cool completely before slicing. Enjoy it plain, or serve it with fresh fruit or whipped cream for an extra treat!
