  • 1 cup 200g granulated sugar
  • 4 large eggs
  • 1/2 cup 120ml honey
  • 1/4 cup 60ml vegetable oil or melted butter
  • 1 cup 125g all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Zest of 1 lemon optional
  • For the glaze optional:
  • 1/2 cup 120ml honey
  • 1/4 cup 60ml water
  • 1/2 teaspoon vanilla extract

  • Step 1: Preheat the Oven
  • Preheat your oven to 350°F (175°C). Grease and line your 9-inch round cake pan with parchment paper to prevent sticking.
  • Step 2: Combine Wet Ingredients
  • In a mixing bowl, whisk together the eggs, honey, and vegetable oil (or melted butter) until well combined. If you’re using lemon zest, add it now for a refreshing flavor.
  • Step 3: Mix Dry Ingredients
  • In a separate bowl, combine the almond flour, all-purpose flour, sugar, baking powder, and salt. Make sure to mix well to distribute the baking powder evenly.
  • Step 4: Combine Wet and Dry Mixtures
  • Gradually add the dry mixture into the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  • Step 5: Bake the Cake
  • Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for about 30 minutes or until a toothpick inserted in the center comes out clean.
  • Step 6: Prepare the Glaze (Optional)
  • While the cake is baking, you can prepare the glaze. In a small saucepan, combine honey and water. Heat over medium heat until the mixture is warm and slightly thickened. Stir in the vanilla extract and set aside.
  • Step 7: Cool and Glaze the Cake
  • Once the cake is done baking, let it cool in the pan for about 10 minutes before transferring it to a cooling rack. If you made the glaze, brush it over the warm cake for added sweetness and shine.
  • Step 8: Serve
  • Allow the cake to cool completely before slicing. Enjoy it plain, or serve it with fresh fruit or whipped cream for an extra treat!
