Method
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour your 9-inch round cake pan to prevent sticking.
Prepare the Walnuts: If you prefer a finer texture, you can use a food processor to chop the walnuts. Aim for a mix of small pieces and fine crumbs for added texture in the cake.
Mix the Dry Ingredients: In a bowl, combine the chopped walnuts, flour, baking powder, and salt. Mix well and set aside.
Beat the Eggs and Sugar: In a large mixing bowl, whisk the eggs and granulated sugar together until the mixture is pale and fluffy. This will take about 3-5 minutes with an electric mixer.
Add Butter and Vanilla: Slowly incorporate the melted butter and vanilla extract into the egg mixture, mixing until well combined.
Combine Dry and Wet Ingredients: Gradually fold the walnut mixture into the egg mixture. Be gentle to keep the batter light and airy.
Pour and Bake: Pour the batter into the prepared cake pan and spread it evenly. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Cool: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a cooling rack to cool completely.
Serve: Dust with powdered sugar and garnish with whole walnuts if desired. Slice and enjoy!
