Method
Step 1: Cook the Tortellini
Boil Water: In a large pot, bring salted water to a boil.
Add Tortellini: Add the tortellini to the boiling water and cook according to the package instructions (typically 3-5 minutes for fresh or 7-10 minutes for frozen).
Drain: Once cooked, reserve about 1/2 cup of pasta water and then drain the tortellini in a strainer.
Step 2: Prepare the Tomato Sauce
Heat Oil: In a large skillet, heat the olive oil over medium heat.
Sauté Garlic: Add minced garlic and sauté for about 1 minute until fragrant, being careful not to let it burn.
Add Tomatoes: Stir in the canned diced tomatoes (with juice), oregano, sugar, salt, and pepper.
Simmer: Let the sauce simmer for about 10 minutes, allowing the flavors to meld and the sauce to thicken slightly. If it gets too thick, add a bit of reserved pasta water to achieve your desired consistency.
Step 3: Combine and Serve
Mix Tortellini and Sauce: Add the drained tortellini to the skillet with the tomato sauce. Toss gently to coat the tortellini with the sauce.
Adjust Seasoning: Taste and adjust salt and pepper if necessary.
Garnish: Serve immediately, garnished with fresh basil leaves and grated Parmesan cheese.
