  • Drain: Once cooked, reserve about 1/2 cup of pasta water and then drain the tortellini in a strainer.
  • Step 2: Prepare the Tomato Sauce
  • Heat Oil: In a large skillet, heat the olive oil over medium heat.
  • Sauté Garlic: Add minced garlic and sauté for about 1 minute until fragrant, being careful not to let it burn.
  • Add Tomatoes: Stir in the canned diced tomatoes (with juice), oregano, sugar, salt, and pepper.
  • Simmer: Let the sauce simmer for about 10 minutes, allowing the flavors to meld and the sauce to thicken slightly. If it gets too thick, add a bit of reserved pasta water to achieve your desired consistency.
  • Step 3: Combine and Serve
  • Mix Tortellini and Sauce: Add the drained tortellini to the skillet with the tomato sauce. Toss gently to coat the tortellini with the sauce.
